At The Blend Bistro In Palm Beach Gardens, Eating Healthy All Year Long Can Be Easy And Delicious

When customers walk into The Blend Bistro in Palm Beach Gardens, some seek more than a salad or smoothie; they seek advice.

“They ask, ‘What would give me energy?’, ‘What’s going to help with my liver?’, or they have a cold,” co-owner Linda Butler said.

One of her favorites juices to recommend is The Pick Me Up Cocktail—a smoothie of lemon, ginger, apple, apple cider vinegar and honey—which she created more than a decade ago.

“It’s very uplifting,” she said. “It’s energizing.”

The former nutritional consultant opened the organic food and juice shop just a little over a year ago with a partner who’s been in the restaurant industry for almost 15 years.

Now after celebrating its first year of business, the health-conscious restaurant located within Downtown at the Gardens is heading into 2016 ready to introduce even more locals to a nutritious lifestyle.

“It’s a merging of where healthy meets delicious—where a plant-based eater and a meat eater can both sit down and enjoy a healthy and delicious meal,” Butler said.

In Southern California, from where Butler moved, eating healthy and organic is the norm. But sometimes in South Florida, it can take more convincing, the restaurant owner has found. Still, it pays off.  

Blend Bistro’s staff spends hours every day freshly preparing these ingredients, and the customers can see the results.

“People tell me, ‘I leave your restaurant not feeling bloated, and your food is just so delicious,'” Butler said.

In fact, Blend Bistro’s roasted poblano pepper dish stuffed with quinoa pilaf, ranch-style beans, cilantro pesto and goat cheese has become a customer favorite, Butler said.

For those who are open to this new eating experience, The Blend Bistro provides an ideal “blend” of experiences—a blend of foods to satisfy every diet (vegan, vegetarian, gluten-free and carnivores alike), a blend of spices (from Indian to Mediterranean to American), and even a blend of atmospheres. 

During the day, the restaurant is a casual sit-down space where guests can meet with friends or business clients. But later in the evening, the setting transforms into more of a romantic venue—lit candles on each table bring warmth to the restaurant’s classic white mica countertops and chandeliers.

The Blend Bistro is open Monday to Thursday from 11:30 a.m. to 7 p.m., Friday and Saturday from 11:30 a.m. to 9 p.m., and Sunday from 12:30 p.m. to 7 p.m. The restaurant offers both dine-in and take-out.
