Apricot Collins

1.5-1.75 oz. Hayman’s Old Tom Gin

.75 oz. Rothman and Winter Orchard Apricot Liqueur

.5 oz. simple syrup or agave nectar

.5 oz. fresh squeezed lemon juice

2-3 oz. club soda

Layer ingredients in a Collins glass with ice, and stir. Garnish with a lemon peel.
