Tequesta resident Milka Gordillo has loved to express herself creatively through baking since she was a child. In 2012, she took the leap and enrolled in the Baking & Pastry Program at Johnson & Wales University in Denver and, three years later, she started her own baking business, Sweets by Milka. Her specialty is all things stuffed—specifically, stuffed marshmallows and cookies, with everything made from scratch. For the marshmallows, she starts by caramelizing organic cane sugar, organic agave, salt, and water. Once it reaches the caramelization point, she says, “I create ‘air magic’ and whip it until the caramel becomes a fluffy cloud.”
She stuffs individual bites with delectable fillings, then adds a crunchy topping like toasted pecans atop a salted caramel marshmallow (her best seller). Her most popular stuffed cookie flavors are dulce de leche and guava with cream cheese. “Every bite I create has magic inside,” she says. Besides her signature stuffed creations, Gordillo also creates coloring kits and shaped coffee toppers, all made with her lovingly handcrafted marshmallow. For superfans, she has a monthly subscription box in the works.
