
Spring is in the air, and local pastry chef Halie Wallace is feeling inspired. Wallace, who has been the executive pastry chef at Palm Beach Marriott Singer Island Beach Resort & Spa since November, has created some truly special desserts for the resort (including its main restaurant, ONA Coastal Cuisine) to celebrate the season.

The Enchanted Violet is made with vanilla bean panna cotta layered with blue matcha, violet, and hibiscus flowers, delivering subtle aromatic flavors and a burst of colorful spring cheer. “This is naturally beautiful as it does not contain a drop of artificial coloring—it’s nature at its finest,” says the chef. Another creation, Not Your Grandma’s Garden, is a masterpiece of chocolate mousse sitting on a magical bed of flowers and mushrooms, with fluffy matcha moss, mini Champagne strawberries, and refreshing raspberry sorbet. Says Wallace: “This one’s for my grandmother, who always had the most beautiful gardens and still has an active green thumb today.”

Wallace, who graduated from Johnson & Wales University in Miami with a degree in baking and pastry arts in 2015, worked in the kitchens at The Breakers Palm Beach, Four Seasons Resort Palm Beach, and Eau Palm Beach Resort & Spa before coming to Palm Beach Marriott Singer Island last June. “I’m excited for a future here,” she says. “This is where I see myself settling down.”
