Make your Valentine’s Day even sweeter with a modernized version of bananas Foster from Jupiter’s 1000 North. “Bananas Foster is such a classic dish, and what I like to do most is reinvent the classics,” says Executive Pastry Chef Mary Maugeri. A crémeux (creamy) dome filled with a rum-based sauce sits atop a base of crunchy banana bread with almond slices. The dome is then covered with a shiny mirror glaze and garnished with chocolate almond bark and caramelized bananas.
“The traditional dessert can be very sweet, so the acidic note from the chocolate balances that sweetness,” says Maugeri. Servers pour bananas Foster sauce around the plate tableside to finish the dish, which is extremely popular with patrons. Although the dessert takes three days to assemble and produce, 20 or more are served in a typical evening.
