Diners enjoy the sound of crashing waves as they indulge on seafood-centric dishes at The Singer Oceanfront Resort's new restaurant

Caretta caretta is the scientific name for loggerhead sea turtles, which nest each season at Singer Island Beach. So it is a fitting name for the new restaurant at The Singer Oceanfront Resort, which opened last August. Diners enjoy the sound of crashing waves as they indulge on seafood-centric dishes prepared by Executive Chef Glenn Rogers Jr. Originally from Massachusetts, Rogers incorporates New England influences into the menu—like the lobster rolls, which are served two ways. Choose either the cold, Maine-style roll with Bibb lettuce and lemon aioli or the warm, Connecticut-style tossed in brown butter.

“I call our cuisine ‘coastal comfort food’ because it’s really based off flavor,” says the chef. “One of my favorite dishes is the ‘Our’ Shrimp & Grits. The sweetness from the orange, savoriness from the Florida citrus butter sauce, creamy Parmesan polenta, sautéed spinach, and blistered cherry tomatoes… You get it all in one bite.” For non–seafood lovers, options include a Caribbean jerk chicken, an 8-ounce filet, and a pappardelle pasta dish.

Rogers also puts a unique spin on charcuterie with a “sea-cuterie” board, which includes smoked mahi-mahi dip, charred octopus, shrimp cocktail, crusted ahi tuna, and accompaniments like pickled red onions, pickled jalapeños, and crackers. Caretta Caretta is open for breakfast, lunch, and dinner daily to resort guests and the public, and its all-day menu is also available at the Top Shell outdoor bar, poolside, and can even be delivered to guests lounging on the beach.
