Get to Know Tommy Nevill

Owner, NEVS Barbecue

For Tommy Nevill, great Texas barbecue starts with restraint. “Start with a great product, keep it low and slow, and let that product speak for itself,” says the Florida native, who discovered his passion for Central Texas-style barbecue while living in the Lone Star State. Today, he and his wife, Kelsey, own Nevs Barbecue in Palm Beach Gardens, where prime meats are seasoned simply, smoked over post oak, and served until the day’s supply is gone. Brisket remains both Nevill’s favorite and “the toughest cut to master,” partly because “no two cuts of meat are ever the same,” he explains.  A seasoned pitmaster must read each cut, he says, then adapt throughout the cooking process, and still deliver a consistently tender, flavorful result. He is also quick to bust the myth that a pink smoke ring guarantees great barbecue. “The real magic is in the process, seasoning, and time spent in the smoker,” he says. Asked to describe Nevs in three words, Nevill doesn’t hesitate: “Bold. Authentic. Family.”

Best Bakery: Bread by Johnny

Q&A with Michael Rolchigo

Tavolena is named after your grandmother, Lena. What’s one lesson she taught you that still guides your kitchen?

I remember going to the grocery store with her at a young age, she would select her meats at the counter (sometimes driving the butchers crazy ). She would also hand-select her produce very carefully. That always resonated with me to be ingredient-driven and to source the best quality ingredients to create the best possible meal.

What dish on your menu feels the most like home?

The Sunday Feast consisting of Lena’s original recipe meatball, house-made Italian sausage, and pork shoulder all simmered in her long-cook tomato sauce. Every week  this was our Sunday dinner, served in the late afternoon. I was next to my grandmother almost every week watching her prepare this beautiful tradition.
